Four Ways to Better Health

Greetings!
"Oh, the summer time is coming and the trees are sweetly blooming..."
Those words from the old Scottish ballad Wild Mountain Thyme
really capture the essence of the moment as I look out over my sunny
garden. We had a sprinkling of rain last night to clear the air and
make everything bright, and it feels like all is well with the world.
This month we have some great salad dressing recipes for those who want
the benefits of a little oil without too many calories. That is the
first way to better health. The second way is to avoid soy, except for
small amounts of fermented soy products. The third is one you probably
won't want to try, but being born with AIDS seems to have given a lot
of children some sort of super immunity to disease. The fourth way may
surprise you. It turns out that giving blood is not just an altruistic
gesture. It is actually good for your heart.

Dress Your Salad the Healthy Way
Most
people eat salads for health, so why not use the healthiest possible
dressing? A recent study shows that very small amounts of monosaturated
oils (less than a teaspoon) will greatly boost nutrient absorption from salad ingredients.
These include olive oil, canola oil (make sure canola
is organic or it will probably be GMO), peanut oil, or sesame oil.
Saturated fats (butter, coconut oil) or polyunsaturated fats (corn,
soy, sunflower oils) do not appear to have this ability to increase
nutrient absorption. No wonder the classic salad oil is olive!

After
decades of being praised as a health food and an excellent source
of vegetarian protein, soy is finally being recognized as dangerous. It
is not the bean itself that causes problems, but the high levels of
protease inhibitors found in soy (particularly in GMO soybeans). These
protease inhibitors can only be removed effectively by the fermentation
process, which is why traditional Asian cultures only use small amounts
of fermented soy products like miso, tamari, and tempeh.

contain protease inhibitors. All beans contain them, as do grains,
nuts, seeds, vegetables of the nightshade family, egg whites, and other
foods. However, the protease inhibitors in those foods rarely
contribute to health problems because few of those foods are eaten
excessively and cooking deactivates most of them."
The article goes on to say: "Why
be concerned about protease inhibitors? They are the reason soybeans
are notoriously hard to digest, and why soybean consumption stresses
the pancreas. Because the protease inhibitors in soy inhibit the
protease enzyme we need to digest protein, the pancreas has to work
overtime to produce more. If this happens only occasionally, the
pancreas quickly recovers. But if soy is consumed day after day, week
after week, year after year, there will be no rest for the weary
pancreas. The result is an increase of both the number of pancreatic
cells (hyperplasia) and the size of those cells (hypertrophy)."
Bottom line, soy was never the health food wonder it was made out to
be, which is a good lesson to us all. Don't believe everything you
read, even if it comes from doctors or government officials. Most
often, traditional cultures have already figured out the best foods to
eat through trial and error over thousands of years, so when people
start promoting radically different ways of eating, it is time to become
skeptical. Even so, the occasional soy latte won't be a problem, so don't be afraid to indulge now and then.

Kids Who Can't Get Sick!
I
love reading about discoveries on the fringe of the scientific world,
and this one is way out there. It all started with the AIDS epidemic.
Apparently some children born with AIDS have been able to fight it off
by changing their own DNA. When their cells were then tested in the
presence of other disease organisms, it appeared that they were immune
to every disease that has ever plagued humanity.

immune system was. They took a very lethal dose of AIDS in a petri dish
and mixed it with some of his cells and his cells remained completely
unaffected. They kept raising the lethalness of the composition and
finally went up to 3,000 times more than what was necessary to infect a
human being and his cells stayed completely disease free. Then they
started testing his blood with other things like cancer and discovered
that this kid was immune to everything! Then they found another kid
with these codons turned on – then another one then another one
– then 10,000, then 100,000, then a million of them and at this
point, UCLA, by watching world-wide DNA testing, estimates that 1% of
the world has this new DNA. That breaks down to approximately 60
million people who are not human by the old criteria."
Could we be witnessing the beginning of a new race of super-healthy
humans? That would certainly put a lot of doctors, healers, and
hospitals out of business!

Give Blood to Protect Your Heart
Recent
research suggests that the much lower incidence of heart attacks in
pre-menopausal women may be due to monthly bleeding which reduces iron
levels in the blood. However, once women reach menopause, their
frequency of heart attacks eventually becomes similar to that of men.
From Ann Louise Gittleman's blog - "Iron stores are known to rise with
age and, for many years, were considered harmless. But a landmark study
in Finland published in the journal Circulation suggested that
excessive iron stores rank right behind smoking as the most prevalent
risk factor for cardiovascular disease.
"Elevated
ferritin levels may contribute to heart damage—even after a heart
attack—by producing free radicals which attack cellular
integrity. It now appears that menstruating women are protected from
heart disease from the loss of iron-rich blood during the menses."
That doesn't mean that men and post-menopausal women are doomed to
higher levels of heart disease. Studies have shown that men who donated
blood had from 50 to 86 percent reduction in risk of heart attack or
stroke compared to those who never gave blood. So giving blood helps
you as well as the eventual recipient. That is a win win situation if I
ever saw one!
